Pro tip: my starter finally doubled in 4 hours at 78 degrees, should we all be tracking room temp?
For the first time in 2 years my starter hit double in exactly 4 hours instead of the usual 8 or 9, and the only thing I changed was keeping it in my upstairs bathroom during showers. Now I'm torn, because some folks on here swear by a cold slow rise for better flavor while others chase speed and predictability. Part of me thinks dialing in temp is the real skill nobody talks about, but another part thinks I just got lucky with a warm week in Omaha. What do you all go by, the clock or the smell?
