Overheard a neighbor trash talk boxed cake mix, is there a real winner here?
So I was at my neighbor's garage sale last Saturday and this guy walks up to her homemade lemon bars and says 'you can't get that from a box, those are always dry and taste like chemicals.' She nodded but I've been thinking about it since. I've used boxed mix plenty of times, especially after work when I just need something quick, and honestly I've had great results with a few tweaks like adding an extra egg or using butter instead of oil. But I also get the appeal of from-scratch, my grandma's chocolate cake took 2 hours and was worth every minute. The argument seems to be about convenience versus control, but don't you think it's more about technique than the ingredients? I've seen people ruin a scratch cake and also nail a boxed one, so where's the real line? Has anyone else had a boxed mix beat out a scratch version in a blind taste test, or am I just lucky with my brands?
