Finally dropped $80 on a good boning knife and it changed my whole shift
Been using the same beat up Dexter for 3 years and figured it was fine. My buddy at the shop in Portland kept telling me to try a Victorinox Fibrox so I finally ordered one. First lamb breakdown with it cut my time by like 20 minutes easy. Anyone else stick with a cheap knife way too long before upgrading?

Bought a "good" knife once. Dropped it in the sink first week.

@gibson.morgan you hit on something there. It seems like the nicer something is, the more careful you have to be, and the less practical it becomes for everyday use. I see this with all sorts of things - fancy kitchen gadgets that can't go in the dishwasher, premium cast iron that you have to baby with special soap, or even good wool sweaters that you have to hand wash. You almost end up owning the stuff instead of it working for you. There's got to be a happy middle ground between junk and museum pieces.

Respectfully gotta disagree here. A quality cast iron skillet only needs a quick wipe and rinse, no special soap needed as long as you dry it right away. Imo the trick is finding stuff that's well made but also built to take a beating, not just some fancy overengineered thing that looks good on a shelf.
