Last Saturday at a pop-up market in Portland, I was watching this guy dial in his V60 and I mumbled something about my brews always tasting a bit sour. He just looked at me and said, 'you're pouring too fast, slow it down to a drizzle and let it bloom longer.' I tried it that afternoon and honestly, it changed my whole morning cup.
