DAE meal prep in one big pot for 5 straight weeks? Hit 35 containers and now my freezer is mad at me
So I started cooking one giant batch of chili every Sunday night back in early March, and I just counted 35 containers stacked in my freezer from 5 weeks of doing this. The problem is the first 3 weeks taste amazing but by week 5 the beans get kinda mushy and I'm getting bored of the same flavor. Anyone got a trick for changing up a big batch halfway through so it doesn't taste like the same meal 5 nights in a row? I was thinking of pulling half out and adding curry powder or something around day 3 but I don't wanna ruin 20 servings if it's a bad idea.
My roommate did the curry powder thing with a batch of lentil soup and it worked pretty well actually, he pulled out like 6 servings and stirred in a spoonful of curry paste with some coconut milk and it was a totally different meal. Just don't dump the powder straight into the whole pot, portion out what you're gonna eat that week first and season that smaller amount. Worst case you waste 5 or 6 servings instead of the whole batch, and you'll know by day 4 if it was a dumb idea.
