Chicken wings at a hotel buffet taught me more about air fryers than any recipe
Stayed at a Holiday Inn in Des Moines last month for a cousin's wedding. The breakfast buffet had one of those little air fryer stations next to the eggs, which I'd never seen before. I threw in six frozen wings from the continental selection and just pressed the preset button. They came out better than half the recipes I've followed at home, with zero technique involved. The machine beeped after 12 minutes and the skin was actually crisp, not rubbery like my usual attempts. Now I'm wondering if my own air fryer is too small or if I'm just overthinking the whole process. Has anyone else gotten better results from a hotel appliance than their own?
Better than half the recipes I've followed" is a pretty low bar honestly, since most online wing recipes are just someone yelling about cornstarch. I gotta push back though, hotel air fryers are usually the cheapest, most beat up models that have been abused by a thousand hungover guests. That crispy skin is probably less about the machine and more about those frozen wings being preseasoned and flash fried at the factory. Your home unit probably works fine, you're just using fancy fresh wings that need way more fiddling than the crap they serve at a wedding buffet. I've had terrible results from hotel fryers, like sad soggy tater tots, so it's not some magic appliance. Maybe your expectations are just higher at home, and that's okay lol.
