Hot take: my air fryer fries better from frozen than fresh, and a $12 thermometer backed it up
I always thought fresh cut potatoes would beat frozen ones in the air fryer, so I tested it side by side. I used 2 russet potatoes cut into 1/4 inch sticks and a bag of frozen fries, same 400 degrees, same 18 minutes, shaking halfway. The frozen ones came out crisp on the outside and fluffy inside, while my fresh ones were pale and limp. Then I stuck my $12 instant read thermometer in both and the frozen fries hit 205 inside while the fresh ones sat at 165. Turns out the freezing step breaks down the potato cell walls so they release moisture and crisp up better, who knew. So now I am wondering, is it even worth cutting your own fries or do you all just buy frozen and call it a day?
