Warning: was a hater of air frying veggies for years, now I'm converted

Three years ago I swore my oven roasted broccoli was better than anything an air fryer could do. Last month my buddy brought over a basket of air fryer Brussels sprouts at a cookout in Nashville and they were actually crispy on the outside without being mushy. I tried his recipe last Tuesday with a spray of avocado oil at 375 for 12 minutes and they came out perfect. Anyone else have a veggie they refused to air fry until someone proved them wrong?

Used to roast everything at 400 but air fryer changed my whole mind on Brussels sprouts.

Yeah I read somewhere that the air fryer is basically a tiny convection oven so it makes sense it works better for crispy veggies... I was a hard no on cauliflower until my sister air fried it with some garlic powder and now I can't go back.

Oh man, the air fryer cauliflower thing is wild. I was the same way, hated the stuff until my buddy tossed it in some paprika and cumin and now I make it like once a week. It's just the perfect crunch without being soggy, and the garlic powder move is a classic.
