Damp towel trick fixed my dry crust problem overnight
My baguettes kept coming out with that tough, crackly shell no matter how much steam I sprayed. Tried putting a damp kitchen towel over the loaves for the first 10 minutes of bake, total game changer. Has anyone else messed with humidity this way or am I late to the party?
Wait, did you soak the towel in warm water or just dampen it cold? I tried this once but my towel was too wet and it made the crust soggy in spots, plus it stuck to the dough when I tried to pull it off. Also, are you laying it directly on the baguettes or draping it over the pan? I feel like the placement matters a ton for even steam distribution and I keep messing that part up.
