Burned 3 batches of macarons at a church fundraiser in 2019, still won't use that oven
My neighbor's ancient electric oven ran 50 degrees hot and I only figured it out after ruining 60 bucks of almond flour, so now I bring my own thermometer everywhere, has anyone else had a kitchen appliance that just lies to you?
Honestly the real trick is figuring out which dial position is right, my mom's old stove has a setting that's supposed to be 350 but it only works if you turn it to 375 and then back down. Once I stopped trusting the numbers and started treating the knob like a color chart, everything changed. Ovens are like living creatures with moods, you gotta learn their personality instead of fighting them.
