Bought a $20 laser thermometer for my grill and it fixed everything

My steaks were always tough. No matter what I did. Medium rare came out well done half the time. Then I grabbed a cheap infrared gun at Harbor Freight. Measured the actual surface temp of my grates. Turns out my built in gauge was off by 80 degrees. I was cooking way too hot. Now I check four spots across the grill before I put anything on. Has anyone else found a simple tool that changed how they cook?

Man I've been using a meat mallet as a hammer for years, don't judge me.

Respectfully @ryanm60, I gotta push back on this one. A meat mallet is NOT a hammer no matter how handy it feels. The metal pins or ridges on that thing will absolutely chew up whatever you're hitting especially if it's a nail or a screw. Plus the weight distribution is all wrong for real hammering so you're probably way less accurate than you think. I get that it works in a pinch but using it for YEARS is just asking for bent nails and damaged surfaces. Save the mallet for chicken and get a real hammer from the dollar store if money's tight.
