Hit 100 briskets smoked, burned 3 of them this week
I kept a tally on my garage wall and crossed 100 briskets this month. But my last three cooks all ran hot because I trusted a new thermometer probe that was off by 15 degrees. Anyone else hit a milestone right when your gear decides to betray you?

Calibrate the probe in boiling water first, then trust your senses over the numbers.
