Swapped my offset for a pellet grill during deer season, brisket suffered
Back in 2019 I couldn't babysit a fire while hunting near Waco, so I bought a pellet smoker for the week. Now that I'm retired from that lease, I'm back on wood splits but my bark still comes out lighter after 12 cooks. Anyone else lose their touch after a temp control break?
Switching back and forth always messes with muscle memory, same way my grandpa couldnt go from a stick shift to an automatic without stalling for a week. Your bark will come back once your hands remember the fire again, just gotta give it more than a dozen cooks.
