Found a way to stretch one pack of chicken thighs into 4 dinners and I feel like a wizard
Last Monday I bought a $6 pack of bone-in chicken thighs at the Aldi on 5th and roasted them with onions and carrots, then pulled the meat off and tossed the bones in a pot with the veggie scraps I keep in a freezer bag. Simmering those bones for a few hours gave me about 6 cups of stock, which became a pot of soup Tuesday and a batch of rice Wednesday, and the leftover meat went into quesadillas Thursday. Do you all save your veggie scraps too, or am I the only one with a weird bag of onion skins in the freezer?
