Just learned that USDA Prime only makes up about 2-3% of all beef graded in the US
Read it on the USDA website last night and honestly it blew my mind considering how much people ask for it at my shop. How do you guys handle customers who insist on Prime for everything when Choice would work just fine for stew meat or grinding?

Oh come on, is it really that big of a deal? I mean yeah Prime is nice but for stew meat or grinding? That's just throwing money away in my experience. Choice is plenty good for stuff like that and you won't taste the difference once it's cooked down with vegetables and broth. Your mileage may vary but I think people get too caught up in the label without thinking about what they're actually using it for.

nancyg14 that grill fire story killed me, I can just picture it (but also explains why some people think more fat means more flavor and also more danger). It's the same thing I've noticed with people buying organic everything even for stuff with thick peels you're not eating, we just love picking the "best" label without stopping to think if it actually matters for the job.
