I finally learned why my grandpa's cast iron pan outlasts my new one
Last weekend I dug out my grandpa's old #8 skillet from 1962 and compared it to the one I bought three years ago. The old one has worn down edges but the cooking surface is glass smooth, mine already has a rough patch in the middle. I read up on it and found out they used to machine-polish the interiors back then, now they leave them pebbled to save a step. Anyone else notice modern cast iron just doesn't break in the same way, or am I missing something?
