Update: my brother in law talked me out of the $400 knife block and into two good knives instead
I was about to buy a big matching knife block at a kitchen store in Boise for around $400, mostly because it looked nice on the counter. My brother in law, who used to cook in a hotel kitchen, asked me how many of those 12 knives I'd actually touch in a month, and I honestly couldn't name more than three. He said a chef's knife and a paring knife with good steel will outlive most of that set, so I spent $150 on those two and put the rest toward a sharpening stone. Six months in, the two knives still cut like day one and the block is gone from my counter. Anyone here actually wear out a cheap knife set, or do they all just sit there getting dull?
