A barista's critique changed my pour over routine for good
Last month I was at a shop in Portland and the barista watched me do a pour over. She said my water was too hot and I was pouring too fast, which made everything bitter. I went home and tested with a thermometer instead of guessing. Turns out my kettle was reading 210 but actually hitting 214. I dropped to 200 degrees and slowed my spiral pour to about 10 seconds per circle. Now my morning cups taste way smoother and I can finally taste the fruit notes. Has anyone else had a simple tip from a pro that fixed a problem you didn't know you had?
Knew my water temp was probably off but figured close enough was fine, that thermometer trick completely flipped my routine too and now I actually get why people obsess over it.
