That moment I stopped pre-ground and started grinding my own beans
Used to think pre-ground coffee was fine, until I grabbed a bag from a local roaster in Spokane last month and asked them to grind it for French press. Tasted flat compared to the whole beans I ground myself the next morning with a $30 burr grinder. Has anyone else noticed a night-and-day difference once they made the switch?

Got a similar burr grinder after drinking stale pre-ground for years and it blew my mind... the first morning I ground those beans the smell alone was different, richer. Made a pour-over and could actually taste the berry notes the roaster mentioned on the bag, stuff I never caught before. My wife thought I was being dramatic until she did a blind taste test with the pre-ground stuff and picked the fresh ground every time. Once you smell that fresh crack and brew, it's hard to go back to the bagged stuff from the grocery store.

My third cup after switching to a burr grinder I nearly cried because I finally tasted what "blueberry bomb" was supposed to mean, @sethfoster you're totally right about water though I just use tap and probably missed half the notes.

...and the thing nobody talks about is how much your water quality matters too. I tried grinding fresh with tap water and it still wasn't great, then switched to filtered water and it was like a completely different cup. @emery290 you're right about the smell and the notes, but even with fresh grounds if your water has chlorine or minerals it can mute all that. I did a batch with bottled spring water once and the berry notes were way louder, almost tart. Makes me wonder how many people buy expensive beans and gear but skip the water filter.
