The barista at my local shop showed me a trick with tap water that blew my mind
I was at Brew & Grind in Portland last Tuesday complaining about my pour overs being bitter. The barista, a guy named Mike, grabbed my kettle and said 'your water is too hot, you're basically boiling the beans.' He showed me how to let it sit off the boil for exactly 30 seconds before pouring. I tried it at home the next morning and my coffee tasted way smoother, like night and day difference. Has anyone else had a random barista drop a game changing tip on you like that?

Oh man, that's a solid tip! It reminds me of this time I was at a diner and the waitress poured my coffee and it was just perfect, not bitter at all. I asked her what her secret was and she just shrugged and said "I let it sit for a minute before I pour it, my grandma taught me that." It's funny how something so simple makes a world of difference. I've been doing that ever since and it really does help with the bitterness, though I usually count to 45 in my head because I'm impatient, ha.
