Yikes, that story about your buddy is exactly why I keep my knives sharp. I did notice the post specifically mentioned a boning knife though (you know, the skinny flexible one for getting around bones). Those are actually supposed to have a little flex, but the same rule totally applies. A sharp boning knife won't catch and jump off a chicken joint, it'll just glide through. It's all about the right tool being properly sharp, not just brute force.

Remember when people said a slightly dull knife was safer? What changed your mind on that? I used to believe it too until I saw how much a sharp boning knife just follows the curve of a chicken bone without fighting you. That control is everything, because the blade goes where you aim instead of sliding off somewhere you don't want it. A sharp tool feels predictable, and that's way less scary.

Saw my uncle cut rope with a dull pocket knife, it slipped and nearly took his thumb off.

My buddy Jake tried to cut a tough piece of meat with a blunt chef's knife last week. He had to press down so hard that the knife slipped and nicked his finger. Needed three stitches, and the doc said a sharp blade would've gone through clean. Now he's obsessed with keeping his knives razor-sharp.
