Debate: Is freezing bread actually better or does it ruin the texture?
I used to think freezing bread was something you only did if you were hoarding groceries, but my friend talked me into it after I threw out half a loaf from Whole Foods that went moldy in 4 days. She swears the cold temp locks in moisture and slows down the staling process, but I tried a slice last Tuesday and it tasted kinda dry and flaky after toasting. Now I'm split - is it legit for keeping bread fresh or am I just doing it wrong? Has anyone else had success with this or am I being stubborn for no reason?

The whole "locks in moisture" thing is a myth for most home freezers because the ice crystals that form actually rupture the bread's structure on a tiny level. When you thaw it, all that damaged cell structure just lets the moisture slip away faster than if you left it on the counter. I've tried freezing sourdough, sandwich bread, and even bagels and they all come out more crumbly and cardboard-like after a week. People act like it's a magic trick but it's really just slowing down the staling while ruining the texture in a different way. You're not being stubborn at all, the whole freezing thing is just a bandaid for people who buy too much bread at once.

Right, exactly. Its not that freezing does nothing, it just trades one kind of staleness for a different, shoddier kind of staleness nobody thinks to talk about.

Wait, hold up - you're telling me the ice crystals physically tear apart the bread's structure? That actually makes a sickening amount of sense when I think about how my frozen bagels always end up with that weird crumbly edge after toasting. I always just assumed it was my freezer being old or something, not that the bread itself was getting wrecked on a microscopic level.
