Found the secret to not burning breakfast sausage
I always burn breakfast sausage on one side. Flipping it constantly just makes it worse. Read on a random camping forum that you put a splash of water in the pan and cover it. Lets the steam cook it through before you brown it. Tried it yesterday with 6 patties and zero burnt spots. Anyone else got a weird cooking trick that actually works?

My husband was the one who taught me this trick with bacon too. He puts a tablespoon of water in the pan, lays the bacon in, and covers it with a lid. You flip it once after about 4 minutes and it comes out perfectly flat without all that curling up or burning on the edges. For sausage patties I do the same thing but I use maybe 2 tablespoons of water because they're thicker. The steam really does cook the inside all the way through without drying them out. I also do this with chicken thighs when I want them juicy on the inside but crispy on the outside. Just a little water in the bottom of the cast iron pan and cover for the first 10 minutes.

That water trick works for way more than just breakfast stuff, I've noticed the same thing with burgers where a splash of water under the lid steams them just enough without making the bun soggy. @wendy820 basically unlocked the secret to not setting off smoke detectors at ungodly hours and I'm all for it. It's funny how the simplest kitchen hacks end up being the ones that save your morning and your ears from that awful fire alarm beep.
