Found out I was crowding the basket after 8 months of soggy zucchini, and a $3 rack fixed it
I had been piling sliced zucchini in my air fryer for close to a year and could not figure out why the middles stayed mushy while the edges burned. Two weeks ago my wife watched me load it up and just said, 'you know they need room to breathe, right?' I counted it out and I was cramming almost two full cups into a basket meant for one layer. Picked up a cheap stackable rack at the grocery store and now the same batch comes out crisp in 12 minutes instead of 18. Does anyone else have a veggie that only worked once they stopped piling it in?
I did the exact same thing with frozen cauliflower and just kept adding time thinking that was the fix. Turns out I was basically steaming it in its own sweat, one sad layer on top and a wet pile underneath. My wife asked why I looked so proud of a bowl of mush and I had no answer. Now I do two batches and it actually browns, which took me way too long to figure out.
