Frozen chicken wings at 400 degrees are better than fresh ones

Been cooking wings in my air fryer for about 2 years now. Tried fresh wings from the butcher last week and they came out dry compared to a bag of frozen Foster Farms I did for comparison. The frozen ones stay juicier inside because they dont lose moisture during thawing. Anyone else notice this or am I just getting bad fresh chicken?

Yeah I went through this exact thing when I first got my air fryer. Thought fresh wings would be the way to go but they always came out dry no matter what temp or time I tried. The frozen ones have that ice coating that basically steams them from the inside while the outside gets crispy. What really helped me was patting fresh wings bone dry with paper towels and then letting them sit uncovered in the fridge for a few hours before cooking. But honestly even then frozen wings are just more consistent and way easier. I still buy fresh for grilling outside but for air frying frozen is the way to go. Maybe try tossing frozen wings in a little baking powder before they go in if you want them extra crunchy without drying out.

have you tried tossing them in a little cornstarch instead of baking powder? i found it gives a better crunch without that weird taste baking powder can leave sometimes. also yeah the fridge trick is solid, i do that overnight sometimes when i remember. but honestly your point about frozen wings being easier is spot on, i just grab a bag from costco and they come out perfect every time without all the extra steps.

Honestly baking powder's fine if you don't go crazy with it.
