Had to choose between frozen fries and fresh cut fries for game night
I went with frozen because I was running late for the kickoff, but they came out all soggy and the basket was a nightmare to clean. Anybody else find that fresh cut fries crisp up way better even if they take longer?

Damn right fresh cut fries crisp up better. I learned that the hard way when I tried baking frozen ones for a party and ended up with a greasy mess that stuck to the pan like glue. Now I just peel and slice potatoes ahead of time, soak em in cold water for a bit, and they come out golden every time.

You ever try adding a little cornstarch to the soak?

Oh totally, cornstarch is a game changer. I started doing that last year after my fries kept coming out soggy no matter how long I soaked them. I just add a tablespoon to the soak water and let them sit for like 30 minutes, then rinse and pat dry. They come out way crispier and they don't stick to the pan at all, even if I'm using frozen ones in a pinch. It's kinda wild how such a small thing makes that big of a difference.

Yeah "game changer" is right, pat781. I actually started doing that cornstarch trick a few months back but I take it a step further now. After I soak them with the cornstarch in the water and rinse them off, I let them dry on a baking sheet for like an hour in the fridge. Then right before I bake them I toss them in a bowl with another little sprinkle of cornstarch and some oil. It makes this almost batter-like coating that gets super crispy. Last time I did it with russet potatoes and cut them kinda thick like steak fries and they came out perfect, crunchy on the outside and soft inside. Even my kid who usually picks around the soggy parts ate the whole plate.
