Hearing that reheated salmon gets rubbery makes me question your whole meal prep. Mine comes out of the fridge fine, still flaky and moist, not some tough piece of rubber. Are you maybe cooking it too long the first time or storing it wrong? Tbh my lemon pepper salmon still tastes great cold right from the container two days later.

Reheated salmon can definitely get weird if it's overcooked to begin with (been there, had the rubbery bite). Storing it with a little moisture, like a damp paper towel over the container, has saved my leftovers before. Honestly I used to think chicken thighs were too much work but they're my air fryer lifesaver now. Just pat them dry, hit them with some garlic powder and paprika, 20 minutes skin-side down. The fat renders so the skin gets crazy crispy without any oil.
