Just realized air fryer salmon makes my meal prep easy
Used to skip dinner after long work days. Now I throw salmon fillets in the air fryer. Season with lemon pepper. Cook for 12 minutes. Comes out perfect every time. I pair it with microwave rice and steamed veggies. This quick meal stops me from ordering takeout. I feel healthier and save money. What are your go-to air fryer dinners for busy nights?

Hearing that reheated salmon gets rubbery makes me question your whole meal prep. Mine comes out of the fridge fine, still flaky and moist, not some tough piece of rubber. Are you maybe cooking it too long the first time or storing it wrong? Tbh my lemon pepper salmon still tastes great cold right from the container two days later.

Did you see that thing online about how air fryers can dry out fish when you reheat it later? I read some people say salmon gets kinda rubbery if you don't eat it fresh. Your lemon pepper method sounds solid for night-of, but I'm skeptical about it holding up for meal prep days later. Maybe that's why I just use mine for frozen stuff like chicken nuggets when I'm too tired to cook.

Reheated salmon can definitely get weird if it's overcooked to begin with (been there, had the rubbery bite). Storing it with a little moisture, like a damp paper towel over the container, has saved my leftovers before. I'm with @foster.matthew on chicken thighs being a no-fail air fryer backup plan for those nights. It's hard to beat something that's still good days later without any fuss.

Honestly I used to think chicken thighs were too much work but they're my air fryer lifesaver now. Just pat them dry, hit them with some garlic powder and paprika, 20 minutes skin-side down. The fat renders so the skin gets crazy crispy without any oil.
