Just realized that breaded zucchini sticks need a rest before air frying
I used to coat and cook them right away, but waiting ten minutes lets the coating stick better. Now they come out crispy without falling apart.

My grandma's trick was to let them sit for thirty minutes on a wire rack. That ten minute rest is a good start, but it's just the beginning. The coating needs time to really dry out a bit and stick to the veggie. I tried shorter times and ended up with a tray of breading and naked zucchini. Patience is the secret ingredient they never list.

You only wait ten minutes? Mine always fell apart until I started resting them for a full hour. The coating needs to hydrate completely. Ten minutes seems way too short.

Did you also have issues with the coating sliding right off before you changed your method? I totally get it now. I tried the shorter rest so many times and it was a mess every single time. Moving to a full hour made all the difference for me too. It's one of those things you have to learn the hard way I guess. Patience really is the key with this.

Ugh YES, my early attempts were a total disaster zone. I'd get impatient after twenty minutes and then watch the coating just slide right off into the oil like a sad blanket. I created more burnt crumb soup than actual crispy food. It took ruining like three batches of chicken to finally admit that maybe I wasn't smarter than every recipe ever written. My kitchen taught me patience through pure, greasy failure.
