Baked bread for 10 years before I learned about bench rests

Always tossed my dough straight into the pan after shaping. A old timer at the farmers market watched me and laughed, said I was killing the gluten structure. Anybody else have a simple fix that took way too long to figure out?

Ten years? You didn't let it rest a single time?

Did you try a longer autolyse to help the gluten relax?

Yeah, the bench rest part caught me off guard too. Changed my whole bake.
