DAE find out their oven temp is way off after years of baking?
I was calibrating my oven yesterday for a new sourdough recipe and found out it runs 35 degrees hotter than the dial says after I borrowed a probe thermometer from a friend. Been baking cookies and breads at the wrong temp for like 2 years and wondering why stuff was always slightly off. Anyone else check their oven and get a surprise like that?

That thing about banana bread being doughy in the middle hits home, @wade250. But here's a twist nobody mentioned - electric vs gas ovens might lie differently. I've noticed gas ovens can be more unpredictable with humidity too. My last place had gas and the temp swung way more than this new electric one does, even after I fixed the calibration.

And you know what, I used to think oven thermostats were pretty reliable honestly. I figured if you set it to 350 it was 350 inside, no question. Then I got a cheap oven thermometer from Amazon and found out my old oven was running 25 degrees cold. That explained why my banana bread was always a little doughy in the middle even when the edges looked perfect. Now I keep that thermometer right on the middle rack and check it every time I bake.
