Just found out blind baking isn't always necessary for fruit pies
I stumbled across an old baking forum where someone argued that pre baking the crust for apple pie actually makes it tougher, not flakier. They said if you use enough filling and the right temp, the bottom cooks through just fine without getting soggy. So do you always blind bake for fruit pies or is that a waste of time like this person claims?
You ever notice how some people just have a gift for making a mess look professional? My buddy @aaronsullivan, he tried blind baking once for a lemon tart and ended up with crust crumbs welded to the foil like some modern art piece. His kitchen looked like a flour bomb went off, and he swore off pies for a month. But the funny part is, the tart itself turned out fine, just ugly. So honestly, if your attempts look like a crime scene, you're probably closer to edible than you think. Keep at it, just maybe invest in some good pie weights and a steady hand.
