Had to pick between a WSM 22 and an offset, went with the offset for $550
Tbh I was dead set on a Weber Smokey Mountain for years, thinking it was the safe bet for weeknight cooks. But then I found a used OK Joe Highland at a yard sale in Austin for $550 and decided to gamble on the offset instead. Three cooks in, I'm still fighting with temp swings, but the bark on my last brisket was something I never got off a bullet smoker. Anyone else regret or love going with an offset over a more set-and-forget setup?
