My neighbor's 30 year old offset changed my mind about pellet grills
I was talking to Bill from two doors down after he pulled a pork butt off his old stick burner that he's had since the 90s. He said 'you're not cooking with fire, you're cooking with a thermostat' and that got me thinking about why I bought my pellet smoker in the first place. Has anyone else gone back to a traditional offset after getting too comfortable with set and forget?
Bill's got a point, but here's my question: when you pulled that first butt off your pellet smoker and it came out perfect with zero babysitting, did you actually feel proud of it, or just relieved you didn't screw it up? I remember my buddy Dave bragging about his Traeger doing a 14 hour brisket while he slept, then he served it and it was good, but he couldn't tell me one thing about the smoke ring or the bark texture. That's what gets me, the set and forget takes away the whole reason I stand out in the cold at 6 AM, which is watching the fire and feeling like I actually did something. So what was your first cook on the offset going to be, and are you ready for the part where you want to go back to bed but the fire won't feed itself?
