My uncle swore wrapping brisket in foil at the 3 hour mark would wreck it, and he was dead wrong
My uncle Walt has been cooking on a offset stick burner out in Abilene for close to 20 years now and he swore up and down that wrapping a brisket in foil before the stall would turn the bark to mush. He told me this at a family cookout back in April while poking my rib with his finger like he was checking tires. I tried it anyway on a 14 pound packer two weekends later, wrapped it at 165 internal, and pulled it at 203 after letting it rest in a cooler for two hours. The bark held up great, my probe slid in like warm butter, and Walt ate three slices without saying a word about the foil. Anybody else got a family member who swears by some old rule that does not hold up when you actually test it?
