Spent 8 hours chasing a grease fire that was just my drip tray
I was running a brisket overnight on my offset and kept getting these nasty flare ups that would torch the bark. Tried adjusting the firebox vents, moved the meat around, even swapped wood types. After 8 hours of fighting it, I pulled the drip tray and found it was completely packed with old grease from like 4 cooks ago. Cleaned it out and next cook was smooth as can be. Has anyone else had a stupid simple fix like that ruin a whole day of smoking?
