Thought offset smokers were just hype until my uncle's 1985 Oklahoma Joe changed my mind
I always figured stick burners were mostly about looking cool at cookoffs, so I stuck with my pellet grill for 4 years. Then my uncle in Amarillo fired up his beat up offset for a brisket last month and the bark and smoke ring were so much better than anything I ever pulled off that I went home and started shopping for a cheap used one. Anyone else make the switch late, or am I the only one who waited way too long to try real fire?
Man, my buddy Jake did the exact same thing. He ran a Traeger for years and swore by it, then his neighbor let him try an old Brinkmann offset at a backyard party and he came home that night already scrolling Facebook Marketplace. Took him about two months to find one cheap, and the first brisket he did on it had a bark so dark and crusty I honestly thought he burnt it. Nope, just real smoke doing its thing. He still uses the pellet grill for weeknights but the offset comes out every time he wants to show off.
