Uncle Bob's mayo trick on brisket, I thought he was nuts
At a family cookout last month in Tulsa, my uncle Bob insisted on slathering Duke's mayo all over the brisket before the rub. I laughed and told him he'd ruin a $85 prime packer. Man, that thing came out so juicy and the bark set perfectly. I ate my words with a slice. Anyone else ever tried something like that and got proven dead wrong?
Respect to Uncle Bob for proving us all wrong, that mayo trick is some kind of magic. Makes me want to try it on my next smoke just to see if I get that same perfect bark.
