Frozen veggies beat fresh for my meal prep, here's why I switched
I used to buy fresh broccoli and bell peppers every Sunday for my weekly meal prep, but by Thursday half of them were soggy or worse. Last month I finally did the math: I was throwing away about $8 to $10 worth of produce every single week. So I switched to frozen bags from the grocery store, like a 2 pound bag of mixed vegetables for $2.50. The texture is actually fine once you roast them or throw them in a stir fry, and they keep for months in my freezer. My meals come out cheaper, I waste almost nothing, and prep takes less time since there's no chopping. Has anyone else found frozen to hold up better than fresh for their budget recipes, or am I missing something about the fresh stuff?
