That one Friday rush that almost broke me, 15 years later
Back in 2009 I worked the counter at Martin's Meat Market in Dayton. We had a church picnic order for 300 pounds of pork chops plus a wedding party needing 40 standing rib roasts on the same Friday. I showed up at 4 AM and didn't sit down until 9 PM, my hands were raw from the band saw. What made it stick was the old timer who ran the register, he kept saying 'slow is smooth, smooth is fast' every time I dropped a cut. Anyone else have a day where you questioned the whole career but somehow pulled through?
Batch the cuts before slicing. The old man was right, once I started grouping by size and not rushing the saw, the pace actually picked up. Sometimes the best lesson is realizing you can't force a block of steel to move faster.
