Tried the 99 cent store soy sauce in a stir fry last night and it beat the $8 bottle
I did a side by side in two pans with the same veggies and chicken and the cheap stuff tasted deeper and less salty. Has anyone else done a blind taste test with cheap staples like this, or am I just fooling myself?
Taking your side by side idea further, try it with more tasters and no labels. Pour both into unmarked bowls, have someone else label the pans, and see if you pick the cheap one again. The catch with soy sauce is the salt, since cheap brands often cut back on sodium and let the bean flavor come through more. Store brand stuff just sits on the shelf longer too, so it can get a darker, mellower taste that way.
