Appreciation post: A clogged hood vent at my spot in Reno taught me to stop trusting the label on the filter
Last Thursday our hood vent stopped pulling air during the dinner rush and we had smoke rolling across the line for about 20 minutes. We had changed those filters two weeks before, and the box said they were good for 90 days, so I never even looked at them. When the tech came out Friday morning he showed me the grease had basically turned to glue and one filter was so backed up it weighed almost 4 pounds. He said in a place doing 200 covers a night, those cheap filters are done in 10 days, not 90. I had been going off the box instead of actually checking the filters with my own hands. So now I want to know, how often do you all swap yours in a busy kitchen, and do you go by days or by feel?
