Took me 3 hours to fix a broken hollandaise because my whisk was the real problem
Had a Saturday brunch rush at the spot in Portland and my hollandaise broke on the fourth batch in a row. I kept adjusting heat and adding water, doing everything by the book, but it kept splitting. Finally grabbed a different whisk from the back and it came together in 90 seconds. The old one had a bent wire that wasn't whipping air in evenly. What tools have you all tossed that were quietly ruining your results?
