Unpopular opinion: resting steaks on a wire rack beats the towel wrap every time
I used to wrap steaks in foil and a towel to rest them because that is what my first chef in Chicago showed me, but the crust always went soft. Tried a bare wire rack over a sheet pan for 10 minutes on a 1.5 inch ribeye and the crust stayed loud while the juice stayed on the board. Now half my crew swears the foil wrap keeps more juice in and the other half says the rack wins on texture. Which side are you on, and does it change for a 20 oz cut?
