The barista at Kiln in Portland told me my grind was "fighting" my pour and I was mad about it
I was grinding fine and pouring slow for months, proud of my 3 minute brew, and she watched me once and said I was just choking the bed and getting sour cups out of fear. She said to back off two clicks and pour faster, and my cups went from muddy to actually sweet in about a week. Now I time my first pour at 45 seconds out and stop fussing with the kettle. Anyone else had someone call out a habit you defended for months?
Took me a while to admit my own version of this: I was dosing way too much coffee because a bigger bed felt safer, and my 22g basket was hiding bad pours. Cut to 18g, kept the same grind, and the cups got clearer overnight. That barista basically told you the puck was telling the truth and your timer was lying.
