Best week I ever had in my fridge was last March when I found a jar of pickled eggs I forgot about for 6 months
I opened them up expecting a science experiment but they were actually perfectly fine. Tasted amazing, like super tangy and the texture was still firm. That same week I found a half eaten block of cheddar behind the veggie drawer that had aged into a crumbly sharp cheese I couldn't stop eating. My wife thought I lost my mind but I was just eating 6 month old fridge leftovers that turned out gourmet. Has anyone else accidentally aged something in their fridge and loved the result?

Dude YES this is my entire life right now. I found a jar of homemade salsa from like four months ago that I thought was going to be a mold bomb but it was actually this fermented spicy perfection. My fridge is basically a roulette wheel of forgotten food experiments and sometimes you hit the jackpot. The pickled egg thing makes total sense to me because vinegar is a PRESERVATIVE so they just got better over time. I swear half the best stuff I eat is stuff my wife tells me to throw out but I ignore her.

The salsa you described sounds exactly like a jar of fermented hot sauce I pulled out of my fridge last week that was eight months old and it was the best thing I've had all year. My wife gives me the same look when I eat something she's labeled "science experiment" but I just tell her that vinegar and salt basically stop time so what's the worry. I've found pickled okra from two summers ago that was still crunchy and good so I'm starting to think the fridge is more of a time capsule than a storage box.
