Man, a buddy of mine tried to impress his new in-laws with a fancy dinner and used some ancient rosemary. The whole chicken tasted like pine needles and sadness. It was such a awkward meal, you could see the disappointment on his mother-in-law's face with every bite. He learned the hard way that old herbs don't just lose flavor, they can turn into something else entirely. Now he marks all his jars with the date he opens them. That one night probably set back his good son-in-law points by a year.

Yeah, that story from @sean_green44 about the rosemary chicken is all too real. It reminds me of the time I grabbed what I thought was chili powder for some tacos, but it was actually some super old, clumpy cayenne. The heat was completely gone and it just added this weird, stale bitterness that made the whole filling taste off. I had to start over from scratch. It's wild how a single jar you forgot about can force you to trash a whole meal. What's the oldest thing you've found hiding in the back of your spice rack?

Speaking of old spices doing weird things, paprika turned on me once. Made a dry rub that tasted like bitter dust, completely threw off a whole batch of ribs. It's crazy how something so small can just wreck a flavor profile. Now I'm pretty nuts about sniffing everything in the cabinet twice a year.
