My aunt's comment about my dry cake at the family picnic

I brought a lemon pound cake to our family picnic in Riverside Park last weekend... it looked perfect but was so dry you could choke on it. My aunt, who used to run a bakery, pulled me aside and said, 'Honey, you're over-creaming the butter and sugar... you're putting too much air in before the flour even goes in.' It was a total lightbulb moment for a fail I've had a bunch of times. Has anyone else fixed a dry cake problem by changing how they mix things?

Over-creaming is a real thing. My cakes got way better when I stopped mixing the butter and sugar for so long.

Isn't it funny how the smallest tweak to a routine can fix a huge problem? I see this everywhere, like when I stopped stirring my pancake batter so much and they finally got fluffy. We get stuck doing things one way because it's how we learned, and a tiny change feels wrong even when it's right. Your aunt's tip is a perfect example of that.
