Unpopular opinion: I never chill my pie dough before rolling.

It comes out flaky every time, no fridge needed.

My grandma's recipe never called for chilling either. Works fine for me.

Guess my pie crust and I are both a little lazy. Paulw53 is out here doing the proper chill thing while I'm just winging it. Still tastes good though.
