Finally figured out my brisket was drying out because I was wrapping it way too early... my neighbor saw my cook and just said 'your bark looks pale, man'.

Honestly, that's the hardest part to get right, waiting for the bark to set before you even think about wrapping.

That "waiting for the bark to set" thing is everywhere once you see it. It's like not touching paint to see if it's dry, or not lifting the lid on rice. The trick is always doing nothing when you really want to do something. Drives me nuts, but it's usually the right move.

My dad always said the best gardening happens when you put the tools down and walk away. It's that same rule for smoking meat, painting a wall, or even baking bread. The modern world trains us to act, but so much quality comes from the quiet gaps where we just let things be. I've ruined more projects by jumping in early than I ever have by waiting too long. It's a hard lesson to learn because doing nothing feels like a failure, even when it's the key to success.
