Saw a guy at a comp in Austin using a fireboard for his offset, blew my mind
Last weekend at the Franklin BBQ throwdown I noticed this pitmaster running his whole cook off a little wireless temperature box with a phone app, no thermopen in sight. I've been doing stick burners for 6 years and always babysit the firebox, but he was just chilling in a lawn chair watching graphs on his screen. Has anyone else switched to a smart temp monitor for their offset, or is the old school method still the way to go?
